But sometimes you want to get something pure. And these little fellas, they are as pure as it gets. They are small, easy to make and so soft and cheesy from the inside, they will be a perfect treat on your next vegan picnic. Cashew nuts count for the wonderful texture while nutritional yeast give it this Parmesan-like flavor. But unlike the way they feel in your mouth, they are for real, truly vegan.
500g frozen, chopped spinach (or 1 kg fresh spinach)
1 cup raw cashew nuts
2 tablespoons nutritional yeast
1 tablespoon spelt flour
1 tablespoon lemon juice
salt, pepper, thyme
If you use fresh spinach, wash it and put it in a pot, high flame, until it loses its volume. then, take out and spread on a board, and chop it. Place in a sieve and let it cool and drain. Mix the cashews in a blender or a spice grinder until you get a real fine powder.
Once cool, mix with the rest of the ingredients in a large bowl. Let the mix rest for half an hour. With wet hands make little balls, place then on a baking pan covered in baking paper and bake in 200 degrees. 20 minutes, then flip, and 5 move.
Let them cool a bit before you bite.
